Why is Northern China so much drier than Southern China?

Both are equally hot and have large sources of water.

Well, first of all, northwestern China has a huge desert which doesn't provide enough moisture for ample rainfall. Next the question is why there is such a big desert in northwestern China in the first place. The answer is that Japan island and the Korean peninsula block the ocean currents that would have brought a lot moisture up north from the south Pacific.
